Most secret shopping is done by market research firms and consulting firms that have a specific problem to solve; not just a random "pay you to shop" program. These professionals generally require a college degree, and their jobs entail much, much more than just "secret shopping." Further, when they do secret shop, they rarely make purchases (I've done some in the past, never bought a thing).

If a company wants to know how it's customers feel, they'll usually just survey their actual customers (hence the "tell us what you think" on the bottom of receipts). Most of the "secret shopper" stuff you see online is a scam to exploit an attractive urban myth.
