First of all, I wouldn't use the term internship. In veterinary medicine the term internship is reserved for those who have finished vet school already and are doing an extra year of clinical training before starting a residency.Every article and advice I have read on resume writing recently (including that of the dean of admission's at a vet school) has told me to skip the objective statement and write a letter of intent instead. So, take the information in your objective statement and flesh it out into a couple of paragraphs explaining what you'd like to gain from this job and why you want to be a veterinarian.
In this day and age, it's assumed that everyone can operate the simple programs on a computer. The programs you listed aren't really used in a vet clinic. Since you are so young and your resume is so short, you can go ahead and say "proficient in Microsoft Office products" but that's really all I'd say.
Definitely include your high school on your resume and you can include that you were on the honor role and it's ok to include your GPA (but I would use the unweighted version). But, leave off anything about middle school. I also wouldn't list your PSAT score, it's not really relevant and they won't care.
Definitely definitely list all of your animal experience. The 22 hours last summer at a horse rescue should be on there as well as horseback riding (maybe under a hobbies/special skills section though not really volunteer). Even if you have dogs or pets at home you can list that under hobbies or mention it in your letter of intent.
You should also list any extracurricular activities you do at school. Any clubs you are in (especially if you are an officer) or sports you participate in should be on it as well.
Once you have something finished then I strongly encourage you to go to your counselor or English teacher (or even a parent) and ask if they can take a look at it. It's always a good idea to have someone proofread it for you. And these people know you better and might know some things that you can add.

Well, if anything would hold you back, it'd be your SAT scores, and even they aren't terrible. So I'd say you have a pretty good shot there. Woot German.
