Think of things you enjoy in your home town that other places do not offer. People don't travel to find a piece of home, they travel to see change. New Orleans has great food, take them to some local spots that are off the beaten path.

Most travelers enjoy integrating the social systems of foreign places too. Take them to your favorite pub or bar.

National Parks are a good idea too, show them the geography, its probably a lot different than Germany.

As far as your current ideas (mall, french quarter, aquarium) they seem a bit 'typical'. Malls are everywhere and pretty typical on a universal level. Does your area have street markets or fairs? The things sold at places like that are much more interesting and 'local'.

What is New Orleans famous for? What preconceptions do they have about New Orleans already? Take them out and explore those, they will make up their mind about whether they were right or wrong.
