We self stayed in SBH for a week and really enjoyed it. Nice location in Hoove, TESCO just a few steps away, the beach too and very friendly staff.

We will go to Brighton this summer again.

Yes, you can apply for the visa through a Chinese VFS visa application centre in London.
Chinese consular officer are aware of the fact that EU passport holders do not need a residence permit or ILR stamp in their passports. To provide prove that you have resided in the U.K. for longer than two years you will need to add utility bills (landline telephone, gas, electricity, water, council tax bills or tenancy agreement) to your visa application. If you use utility bills add one for the current months and one for at least two years back (but not older than 30months) from the same company. Bank statements/credit card statements are not considered as proof of stay. If you cannot prove your stay you will need to fill an additional information form and pay additional £10.00 referral fee, since your application will be sent to the Chinese Embassy of your home-country for further processing and background checking which may take additional 15 working days.
