To use the term doctor you have to have a doctorate degree. Ministries can use the term if they have a doctorate degree in any field of study. What you are looking to do would be non credit based continuing education. You can not award degrees or anything other than a certificate of completion in that type of school. You can only label yourself as an educator or trainer. If you are not accredited you can not award master or doctorate certificates.

You don't need a finance degree to become a financial advisor. You need sales skills and abilities to learn the market. For a degree in finance, you learn about financial analysis, financial structure, financial modeling, asset valuation, etc. As for financial engineering, that's very specific, you will have to find jobs in major investment firms. If that doesn't interest you, just do a degree in finance and you are employable in any corporation.

Consulting is a great thing if you can diversify your clients (don't rely on just one) and don't mind working as a collector here and there. I enjoyed it, but I didn't like that lack of stability. However, it sounds as though you're set up better than I was.

Also, employers don't like to hire older people because they retire. Consultants or 1099 employees are different. The company does not care quite as much about age because you are just a consultant, not a true employee. People consult beyond 65 all the time.
